In Gilly-lès-Cîteaux, 25 minutes from the Dijon TGV station, Alice and Jérôme Tourbier’s new establishment is the third location in their collection, following Bordeaux and Cheverny. The venture is based at the Château de Gilly, a former Cistercian priory dating back to the 6th century, listed as a historic monument and once the residence of the abbots of Cîteaux. The duo Chevalier & Guillemot, specialists in historic buildings, oversaw the renovation, with interior design by A.S.L. Architecture. The spa hotel in Burgundy features 49 rooms and suites (ranging from 29 to 105 m²) spread across the main building, the Pavillon des Jours, and a former mill converted into a unique suite overlooking the Vouge River. Our favorite? The La Vigne Rose Suite, with its 105 m² of space and original painted coffered ceilings.

At the table, the spotlight is on Julien Martin, a Burgundian chef who trained under two-Michelin-starred chef Nicolas Masse at Les Sources de Caudalie. He presides over two venues: L’Auberge des Cîteaux, offering a warm, regional dining experience (beef chuck prepared Bourguignon-style, meurette-style egg), and Le Clos de la Tour, dedicated to fine dining, where flambéed oysters with Capucin beer are paired with a remarkable wine list.

The spa: beneath the centuries-old vaults of the castle’s former wine cellar, the Caudalie Spa features two mirror-image pools set among stone columns—one for swimming, the other for relaxation, complete with a swan-neck spout. Upstairs, it’s time for vinotherapy, featuring signature rituals and massages rich in grape seed polyphenols. At the reception area, don’t miss the carved panels depicting the four seasons by Victor Gianotta, which conceal the entrance to the mezzanine-level relaxation lounge. A sauna and fitness center round out the facilities.

Château la Commaraine, Burgundy’s first 5-star hotel nestled among the vineyards

Just 10 minutes from Beaune, in the heart of the village of Pommard, this 12th-century château is opening its doors after four years of renovation work led by Richard Martinet (Hôtel de Crillon, Peninsula Paris) under the supervision of Bâtiments de France. The highlight? A 3.63-hectare Clos Monopole vineyard in the Pommard Premier Cru appellation, cultivated using biodynamic methods, which surrounds the property and offers a direct view of the Pinot vines from nearly all 37 rooms and suites. Our favorite? The Cuverie Suite, which overlooks the wine-making facility rebuilt right inside the château itself.

In the dining room, MOF Christophe Raoux oversees the bistro Le Clos (duck pâté en croûte, rooster in Gevrey-Chambertin) and the new fine-dining restaurant Le VIII, set to open in spring 2026 in the former vaulted cellar, where he and chef Jérôme Rioux will present technically sophisticated cuisine. The entire venture is backed by the Champagne Hospitality group, which already owns the Royal Champagne Hotel & Spa.

The spa: a heated outdoor pool overlooking the vineyards, 3 treatment rooms (including one for two), a cold plunge pool, a jacuzzi, a sauna, a steam room, and a Flora Hair Spa treatment room. Facial treatments by myBlend (Dr. Olivier Courtin, Clarins Group) and hair care treatments by Flora Lab Paris. The best part? The RedPulse far-infrared tables and 360° sound bath, which transform every ritual into a next-generation treatment.

The Domaine du Roncemay, a Michelin-starred spa hotel in the Yonne department

Located 25 km from Auxerre, the property is set in a 140-hectare park featuring a small 19th-century château in the Burgundian style. Acquired in 2018 and managed by Fanny Garret, this spa hotel near Paris features 23 rooms and suites with the charm of a family home—distinctive furniture, Burgundy stone, and windows overlooking the golf course or the pool. The biggest change has taken place in the kitchen: since June 2025, Chef Clément Vergeat (formerly of Tracé, Paris) and Pastry Chef Marine Matéos (runner-up in the French plated dessert championship) have taken the reins of the two restaurants. At the brand-new fine-dining restaurant named ERRE—which earned its first Michelin star in March 2026—their cuisine blends Nordic fermentation techniques with Cévennes traditions, featuring ingredients from local 100% producers, in a dining room with Scandinavian furnishings that opens onto the golf course. Next door, Le Bistrot du Domaine showcases regional flavors based on what’s available at the market.

The spa: spread over 850 m² and designed in the shape of a washhouse—an architectural tribute to Burgundy’s heritage—it features 5 treatment rooms, an indoor pool beneath a wooden roof structure, a hammam, a sauna, sensory showers, a fitness room, and a beauty salon. Body and facial treatments by Phytomer and KOS Paris—we’re particularly fond of the Roncemay Detox, an anti-pollution treatment based on marine actives.

Nfar from the vineyards of Chablis and Champagne, this 4 stars, owned by the family Vandendriessche since 1998, which houses 24 rooms (ranging from 25 to 65 m²), is thee «base camp» ideal for a getaway that combines wellness and fine dining. Among the rooms, each of which is unique, we have to admit we have a soft spot for the apartment in dupleix in the former dovecote of the XVI a 19th-century building with a completely round room highlightswooden framework and stone walls with niches. Lat the table caught our full attention. The gourmet restaurant, which resembles an orangery, is run by Chef Maxime Lesorbe e.g., Le Laurent* (1 Michelin star), Royal Monceau, L’Arpège …  arrived recently from the Louis de la Vallière Castle. Tthree different menus are available to guests : Discovery, Flavors in 5 Stops, and Emotions in 7 stops…

The spa : bearing the Nuxe label, it unfolds in a setting elegant where local stone blends with soft colors. Spanning 300 m2, It contains 3 cabins, including one double cabin, a Turkish bath, a sauna, an indoor hot tub, and an outdoor pool. The treatment plan poster the brand's must-haves and care signatures such as the’"Royal Relaxation Getaway," which includes a 25-minute scalp massage, a 40-minute foot reflexology session, a 25-minute back massage, and a 45-minute facial… What else ?

Le Relais Bernard Loiseau, in Côte d’Or

A former coaching post dating from 17th In the 19th century, it served as a stop for stagecoaches, which would pull in to provide lodging and meals for travelers. M was seen thereadaMadame de Sévigné on her way to visit her daughter in Grignan, Napoleon, and many others… In 1904, after becoming the restaurant La Côte d’Or, it was awarded a star when the Michelin Guide’s star system was introduced in 1926. It was later purchased by chef Alexandre Dumaine In 1930, the restaurant earned three stars, which it retained until 1964. In 1975, a young chef named Bernard Loiseau took the helm. Success was not long in coming: the first star in 1977, the second in 1981, and the ultimate accolade arrived in 1991 with the third star. Today, at the two-star restaurant La Côte d’Or, the chef is Louis-Philippe Vigilant. After fourteen years with the band, he became the successor to this culinary heritage from Saulieu: Bernard Loiseau and Patrick Bertron. Dominique Loiseau and her three children at the helm of thist hotel 5 stars exceptional, a member of the Relais & Châteaux, don't rest on their laurels and initiatesnt changes such as the news decor in some rooms and of the amazing spa. Latest highlightss : the beautiful garden and the three dining rooms lined with large picture windows.

The spa: in In the new wing housing the Loiseau des Sens bistro, you'll find the incredible spa and its flagship: thethe VIP spa suite on the top floor. Considered one of the best spas in Europe, it spans 1,500 m² across three floors and features 10 treatment rooms, several pools equipped with massage jets, and a wellness circuit phlebological, from’water bikes, 2 steam rooms, and a sauna overlooking the terrace. Don't skip it the «seaside cabin» that releases iodine, What an experience! The treatments are certified Olivier Claire and Clé des Champs at Ancrage 100% Made in France. A hair treatment is available with Léonor Greyl.

The 7 Fountains, hotel with a luxury spa in Tournus

Din a former 17th-century convent, in Tournus, in the Saône-et-Loire department, near downtown and Saint-Philibert Abbey, A masterpiece of Romanesque art, this 4-star hotel, which opened in December 2019, features 39 rooms, including 2 suites with terraces. We loves her decor refined and warm that we must to the famous duo Lyon-based Les Héritiers, masters of a rich and varied style and multicultural, who doesn't hesitatent Don't mix classic armchairs, velvet curtains, brass pendant lights, and crystal chandeliers… At the Le Cloître restaurant, with its very modern and colorful decor, Chef Stéphane Grégoire, introduces us to Traditional French cuisine with a modern twist with products regional and seasonal. The menu is updated regularly, just to keep us try a wide range of specialties.  We loved the Caveau, a beautiful vaulted cellar; we didn't hesitate to treat ourselves to a wine-tasting session there, where the the most beautiful wineries in the region (a (about 50 items) are highlighted

The spa: The wellness area spans 365 m2 and features a hammam, a jacuzzi, an indoor pool, an indoor pool surrounded by floor-to-ceiling windows, a sensory shower, an ice fountain, and a herbal tea lounge, not to mention a fitness center. Here, guests can enjoy treatments by Cinq Mondes and Vinésime.
