And for good reason, as the establishment is the new venture of brothers Jacques and Laurent Pourcel, five years after the closure of their gastronomic restaurant in Montpellier Le Jardin des Sens. Located in a 17th-century mansionth century, which was once the City Hall and then an annex of the Courthouse, the establishment distinguishes itself thanks to its breathtaking decor, a testament to the ornamental richness of the Age of Enlightenment. This spirit is also found in the hotel's 20 rooms and suites, where the design skillfully blends the past and present through the combined work of architect Philippe Prost and designer Christian Collot, who were committed to preserving the ancient frescoes, wood paneling, and original wainscoting. However, the hotel Richer de Belleval's biggest asset is undoubtedly its restaurant, the new generation Jardin des Sens, where the Pourcel brothers deliver their vision of French haute cuisine. With 10 or 15 courses depending on the chosen menu, diners embark on a journey from land to sea through dishes that highlight the flavors of the South and accurately embody the precision, modernity, and creativity of the twin chefs.
