Interview: Maxime Rosselin and His Bistro-Style Cuisine at Potato Head

Maxime Rosselin has agreed to answer a few questions to share his world with you. Restaurant Chef Potato Head à Bordeaux In Aquitaine, he is also the manager of a second restaurant with his wife Mary Henchley, the Pavlov's dog also located in Bordeaux. Maxime Rosselin gives us his vision of the gastronomy, the role of chef and his restaurant Potato Head, among others. Interview.

JR : What characterizes your restaurant?

With Mary, we wanted to open a type of restaurant Bistronomy. We wanted a certain conviviality, ..., which is why our initial concept for the restaurant was to serve tasting plates. Subsequently, we took up the idea of card and a menu like Pavlov's dog.

JR : Why did you decide to open a second restaurant in the same city?

At Pavlov's Dog, we were sometimes forced to turn away customers, so it was necessary for us to open Potato Head. We tried to open our very first restaurant at Paris for two years. After that, we decided to open it province but we were hesitating between Rennes, as I am Breton, or Bordeaux since Mary is from Bordeaux. And in the end it was Bordeaux, and we don't regret it at all, it's a very pleasant city with a lot to interesting products to cook.

JR : What types of products do you cook? A specialty, perhaps?

We try to cook with as many products as possible, but of course some come back often, like foie gras that recalls the region and Bordeaux. We are looking for what we like in gastronomy, through dressage particularly, then in bistronomy, precisely because of the products. I don't particularly have a signature, which could be more or less our specialty is the Land and Sea and the’acidity.

JR : You are a cook, but what kind of cuisine do you like to eat?

I really like cooking Italian, Spanish and Asian. With Mary, we were able to discover the different culinary cultures of foreign countries thanks to our voyages.

Little anecdote The Restaurant name comes from a trip the couple took to Indonesia where they had the opportunity to taste the cuisine of a restaurant named Potato Head.
