Simple and authentic cuisine
In keeping with the spirit of the establishment, the hotel's chic bistro welcomes its guests in a simple and refined setting, with a view of the sea, of course. Spotted by Christophe Saintagne, with whom he trained at Le Meurice and Chez Papillon, Chef Mylo Levin directs the kitchens of La Table by La Villa for a few months. Largely inspired by the maquis, the menu features fresh, local products, carefully sourced by the young chef. And this sourcing begins at dawn, with the day's fish caught by Mr. Hely, Calvi's only fisherman, with whom the Chef ventures out to sea in search of chapons, pagrets, or groupers. The same applies to the herbs; Mylo Levin personally hikes the trails in the heights of Calvi to find immortelle flowers or thyme for seasoning the dishes.
And for added convenience, head to the Pool Bar for a snack or a cocktail between dives, in a lively and friendly atmosphere.
