Eight hectares of terraced gardens are a dominant feature, punctuated by stone walls where orange, lemon, and olive trees flourish. Hotel Minorca, a five-star member of the Les Domaines de Fontenille collection, has taken its place in a 17th-century palace. Behind the ochre facade of the building, the décor by Guillaume Foucher and Beryl Le Lasseur, displays a joyful mix of Spanish influences: rattan suspension lamps, cement tiles, antique mirrors... Carole & Olivier Pecoux, the owners, want to perpetuate the tradition of a space open to the artistic world by organizing modern and contemporary art exhibitions, as well as visits to galleries, artist studios, and museums. Riding a very current trend in Menorca, this atypical hotel was created from a 19th-century fincae About twenty kilometers from Mahón. Benedicta Linares Pearce and Benoît Pellegrini, both passionate about design and agroecology, fell in love with this building, which was in ruins at the time, nestled in the scrubland, in the heart of 130 hectares of vegetation, offering a perfect view of the Mediterranean. Their ambition? To make it a self-sufficient hotel-restaurant in terms of energy, water, and food before 2030. After replanting hundreds of olive, almond, and lemon trees and rebuilding the dry stone walls, they embarked on the rehabilitation of the various buildings with Atelier Du Pont and the collaboration of Minorcan, Spanish, and French artisans. In the 11 rooms and 3 suites, some with private gardens, balconies, or terraces, you'll find a palette of neutral colors ranging from white to brown, lots of stone, ceramic, local materials, olive and oak wood, and terracotta. No air conditioning or TV: it's for ecological reasons... At the restaurant White Son, la Boyera, which also serves as a yoga studio, offers seasonal cuisine inspired by the Mediterranean. We loved the sublime rock-carved swimming pool and the massage rooms offering esoteric rituals.
