A cuisine rooted in the terroir
Christophe Hay offers cuisine inspired by the surrounding nature and elevates the Loire terroir: freshwater fish caught in the Loire River, herbs, vegetables from the hotel's kitchen garden, caviar, game, and Sologne Wagyu beef... the chef works with a large number of local products. On the wine side as well, the cellar showcases regional terroirs: AOC Cheverny and Cour-Cheverny, white made solely from the Romorantin grape, white Cheverny “Frileuse” from Clos du Tue-Boeuf, or red «Mes Racines» from Domaine de Montcy...
