Transformed into a hospital, then bought by the Société des Eaux Minérales d’Evian, it regained its former refined atmosphere in 2010 thanks to the duo Patrick Ribes-Delphine Chaumont Aidan.
In echo of nature, the interior designers chose to scatter raw elements with sober lines. Thus, wood, stone, and leather in shades of brown lend a warm atmosphere to both the common areas and the 80 rooms and suites, each with a balcony overlooking the lake. On the culinary side, at La Table restaurant, Chef Alexandre Krizia showcases local seasonal products that can be enjoyed on the terrace in good weather. In the summer, he creates delicious bowls for lunch at La Chaise Longue by the pool. Two must-haves at L'Ermitage are the Sunday brunch and the Bibliothèque, a cozy bar with signature cocktails.
