Staying at the Domaine de Roncemay, a spa hotel in Burgundy

Halfway between Dijon and Paris—very close to Auxerre— the Domaine du Roncemay is nestled within the walls of a 19th-century building, set amid 140 hectares of dense, unspoiled forest. With its traditional bourgeois architecture built of Burgundy stone, this member property of Les Collectionneurs presents itself as a large family home in the heart of the countryside. The setting, perfect for unwinding (and reconnecting with yourself!), features 21 guest rooms, including three categories of rooms and suites, all freshly renovated in a light, contemporary style that cheerfully blends solid wood, antique furniture, colorful fabrics, and patterned tapestries.

The Tables of Roncemay

If you escape to this little village in Burgundy to relax, you’ll also appreciate being able to dine there while enjoying good food… and good wine!

The venue features two restaurants: a fine-dining establishment and a bistronomic annex, both led by Chef Pascal Guellec, a Maître Restaurateur and member of the Académie Culinaire de France. The menu features homemade dishes that showcase regional ingredients, without being overly fixated on “locavore” principles. Naturally, the dishes here are paired with a selection of over 500 wines, the majority of which pay homage to Burgundian winemakers and vintages—Côtes de Beaune, Côtes de Nuits, Chablis…—

The bistro's surefire hit? The chef's burger, with the bun transformed into crispy potato patties!

When it comes to desserts, pastry chef Mathieu Besset—who trained under Stéphane Derbord and Jean-Pierre Billoux—brings out the best in beautiful organic and local ingredients through his creations.

The Domaine du Roncemay, a relaxing golf resort surrounded by greenery near Paris

A highlight of this luxury hotel in Burgundy, the Roncemay stands out as one of the most pleasant spa hotel near Paris, in the Yonne department. Spanning more than 850 square meters, a brand-new space dedicated to wellness and relaxation invites guests to experience treatments from the organic cosmetics brand Kos Paris in five fully equipped treatment rooms. Complementing this relaxing experience, a large indoor pool with a sensory journey, a sauna, and a hammam are adorned with natural materials and earthy tones.

An 18-hole golf course on the edge of the forest

Founded in 1989 by Jean Garaïalde and Jeremy Pern—an international golfer and an international golf course designer, respectively—and later redesigned by Julien Xanthopoulos, a consultant specializing in the field (Canal Plus, Golf Plus)—the Domaine du Roncemay golf course stretches over 6,000 meters. Ideal for enthusiasts of this outdoor sport, it is unique in that it winds through woods with century-old trees, ponds, and lush green meadows with a preserved ecosystem.
