R\u00e9sultat\u00a0: le charme de l\u2019Imperator reste intact, il n\u2019a pas \u00e9t\u00e9 transform\u00e9 mais sublim\u00e9, certains \u00e9l\u00e9ments de l\u2019h\u00f4tel ont \u00e9t\u00e9 astucieusement gard\u00e9s tels l\u2019ascenseur, le grand escalier, les arches restaur\u00e9es. Tr\u00e8s attach\u00e9 \u00e0 la r\u00e9gion, il collabore ici avec le Chef Nicolas Fontaine, un N\u00eemois. Au Duende, un macaron Michelin, place \u00e0 une cuisine fran\u00e7aise d\u2019exception\u00a0: d\u00e8s que le temps le permet les agapes se d\u00e9roulent dans le petit jardin du restaurant. A l\u2019Imp\u00e9, la brasserie, la carte favorisant les produits locaux\u00a0: soupe de poissons de roche accompagn\u00e9e de moules de l\u2019\u00e9tang de Thau et riz de Camargue coche haut la main toutes les cases d\u2019un parcours sans faute.
