Authentic Petit Bouchon<\/strong>\u00a0offered an excellent box at the the month of February<\/strong>. Two truly wonderful bottles that surprised\u2014and, to say the least, delighted\u2014the subscribers.<\/p>\n

The February 2019 Box<\/h2>\n

When one\u00a0Subscribe to the Petit Bouchon Authentique box<\/a>, you\u2019ll discover much more than just new fields. In fact, the little booklet included in the package offers a wonderful opportunity to learn more about a variety of fascinating topics.<\/p>\n

In this issue: sulfite-free wines, a delicious recipe by Val\u00e9rie Cupillard (gluten-free buckwheat pancakes with squash and mushroom compote), and a fascinating feature on Valentine's Day.<\/p>\n

As for the wines, we'll introduce you to La Colombi\u00e8re<\/strong> and the Bosc Castle<\/strong>. As always, they are accompanied by a tasting notes<\/strong>.<\/p>\n

Bosc Castle<\/h2>\n

From a vineyard located in the town of Domazan, in the Gard department, the Bosc Castle<\/strong> is a wine organic<\/strong>, but also biodynamic. Bathed in sunshine, it also has the distinction of being a vegan wine<\/strong>.<\/p>\n

50 % Grenache, 50 % Syrah.<\/p>\n

Its History<\/strong> : Although the estate has long been committed to organic farming, in 2010, the owner, Guillaume Reynaud, made a major change: It now offers sulfite-free wines that age well<\/strong>.<\/p>\n

The current owner represents the fifth generation<\/strong> in this field, and he is the inventor of a a winemaking process that produces age-worthy wines without sulfites<\/strong>. To go with it, Jean-Philippe Trollet<\/a>, named the world's best oenologist in 2009 by the \u00abInternational Wine Challenge.\u00bb.<\/p>\n

Its Culture<\/strong> : Bosc Castle<\/strong> is made from grapes grown in vineyards surrounding the ch\u00e2teau, on the stony terroir of Signargues. It is organic, biodynamic, and vegan. No sulfites are added.<\/p>\n

The winemaking process<\/strong> : 100 %, destemmed and with a particularly long fermentation period of 25 days.<\/p>\n

With<\/strong> : a special meal\u2014for Christmas, a birthday, or a celebration. Pull out all the stops.<\/p>\n

The Tasting<\/strong> : It is recommended to decant this wine, and it is best served at a temperature between 18 and 20 \u00b0C. This wine pairs best with a hearty, refined meal. You can admire its intense red color before tasting it.<\/p>\n

La Colombi\u00e8re<\/h2>\n

Thank you Authentic Petit Bouchon<\/strong> to prioritize organic wines<\/strong> for your boxes! La Colombi\u00e8re is another carefully sourced example, for the enjoyment of beginners and connoisseurs alike<\/strong>.<\/p>\n

Mostly N\u00e9grette, Malbec.<\/p>\n

Its History<\/strong> : Vines have been grown on the La Colombi\u00e8re estate since the 15th century. In 2005, Diane, the daughter of Baron Fran\u00e7ois de Driesen, took over the estate with her husband. One of the first steps they took was to switch to organic and biodynamic farming<\/strong>. Thanks to this decision, animals and plants coexist on the estate.<\/p>\n

Its Culture<\/strong> : It is a certified organic and biodynamic wine Biodyvin<\/a>.<\/p>\n

The winemaking process<\/strong> : wine La Colombi\u00e8re<\/strong> is made from hand-harvested grapes, using a particularly interesting winemaking process that does not rely on gravity. The grapes are destemmed but not crushed, and the wine is made using natural winemaking methods.<\/p>\n

This wine is unblended and unfiltered<\/strong>.<\/p>\n

With<\/strong> : It's served as an aperitif; its lightness and mild flavor are sure to please.<\/p>\n

The Tasting<\/strong> : La Colombi\u00e8re is a surprising wine that is sure to make an impression. With its unique flavor profile, it also boasts a beautiful deep red color.<\/p>\n
